I’m really excited to share this recipe with you guys for a couple reasons. First, I had seen this technique on Pinterest a few times and really wanted to try it and the other is because I like making anything that brings back happy memories for me. Growing up, my Step-mom would make jello in wine glasses with cool whip on top and I just thought it was the best thing ever. So I had a lot of fun making these little desserts for Jake and the girls.
I’m not kidding either, these are super simple but look a little fancier than your average Jello cup which is cool.
What you’ll need:
- Jello Mix (1 box makes 8 cups)
- 1 Cup chopped strawberries
- Cool Whip
- Shortcakes (I used the kind you get pre-made in the package)
- Small mason jars
First things first, mix your Jello in a bowl like you normally would and then let it sit for about an hour and a half. Pull it out of the fridge and mix in your chopped strawberries. You want to let the Jello sit before you add the fruit because if you don’t, the fruit will sink to the bottom. So, once you have it mixed well, hold your mason jars tilted a little, and spoon in your mixture. Set them in a cupcake tray to help them keep their shape while they set the rest of the way. Do this for all 8 cups and let them sit in the fridge for another 3-4 hours.
Once they are done, add your Cool Whip and shortcake in whatever way you want. I tried it a few different ways, and they were all a hit. I think this would make a really cute Valentine’s Day dessert for the family or really for any other day. You can’t go wrong with Jello and Cool Whip.
